Provenance is Gandum's restaurant. It cooks using local ingredients, seasonal produce, and whatever is available — without trying to represent everything or please everyone.

Menu

The Provenance menu changes throughout the year, reflecting what the region has to offer at any given time. We work exclusively with fresh, unprocessed products, mostly local, with a special focus on vegetables, legumes, herbs, and grains. Meat and fish appear when they make sense, without being the obligatory centerpiece of the dish. It is a menu designed to be enjoyed at leisure, shared if you wish, and revisited several times without ever finding the same thing.

The Provenance restaurant in Montemor-o-Novo is open not only to guests, but also to those who live in Montemor-o-Novo or are passing through the Alentejo. Many people come just for lunch, dinner, coffee, or a drink in the late afternoon.

A kitchen that starts from the place

At the Provenance restaurant in Montemor-o-Novo, cooking begins before the recipe. It begins with the ingredients available, the seasons, the producers, and the actual limits of the territory.

We work mainly with minimally processed products, sourced as locally as possible, with a special focus on vegetables, legumes, herbs, and grains. Meat is included when it makes sense. Fish is included occasionally.

We don't follow a fixed idea of "Alentejo cuisine." We prefer to cook from the Alentejo.

Product, not performance

Most of the ingredients come from local and regional producers, chosen for their quality and close relationship, not for their label.

We do not purchase industrial ingredients or work with ultra-processed products. We cook with what is available, when it is available—and that means accepting changes to the menu and explaining our choices.

It is a cuisine that prioritizes flavor, texture, and consistency over spectacle.

Transparency is our fundamental pillar

We believe you have the right to know exactly what you're eating and where the ingredients come from. From the vegetables grown in our own garden to the meats and wines sourced from local producers, we share with you the origin of every element that makes up our dishes. We want you to feel part of this process, ensuring that every meal you enjoy here is as honest as it is delicious.

Wines and coffee with purpose

The wine list focuses mainly on natural and organic wines, Portuguese wines, and wines from small producers.

Coffee is treated as an ingredient: organic coffee or specialty coffee. Because not all coffee is the same.

Royal breakfast

For guests, breakfast follows the same logic as the restaurant.

We recommend reservations, especially for dinner and on weekends.

FAMILIES AND CHILDREN

Next to our terrace is a playground for children, so that parents can continue to enjoy their meal when the little ones have finished. We also have highchairs for younger children and, following the same principles that underpin our kitchen, dishes specially designed for them.
